Tropical Rice Pudding

3 c. cooked brown rice
½ c. whole milk
½ c. coconut milk
½ c. mixed dried fruit, chopped
½ c. almonds or walnuts, chopped
¼ c. flaked coconut
1 T. honey
½ tsp. vanilla

Combine all ingredients in 3-quart saucepan. Simmer 10 minutes on medium low, stirring occasionally until milk is absorbed.
