Maple Sausage Egg Bake

1 pkg. maple-flavored pork sausage
10 eggs, lightly beaten
3 c. milk
1 tsp. vanilla
2 c. Granny Smith apples, peeled and chopped
2 T. sugar
1 tsp. cinnamon
6 c. cubed bread
2 c. cheddar cheese, shredded
Preheat oven to 325°. Cook sausage until no longer pink. Combine beaten eggs, milk, and vanilla in bowl.
In a small bowl, stir chopped apples with cinnamon and sugar.
Layer in 9x13-inch, buttered pan: Half of cubed bread, sausage, apples and then cheese. Repeat layers.
Pour egg mixture over the top of all. Bake uncovered for 55-60 minutes.
