Butterscotch Apple Cake

3 eggs
1 ¼ c. vegetable oil
1 tsp. vanilla extract
2 ½ c. all-purpose flour
2 c. sugar
2 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
1 tsp. ground cinnamon
4 medium tart apples, peeled and chopped (4 cups)
1 c. chopped pecans
1 package butterscotch chips (11 ounces)

In a mixing bowl, beat the eggs, oil, and vanilla. Combine flour, sugar, baking powder and cinnamon; add to egg mixture and mix well. Stir in apples and pecans. Pour into an ungreased 13” X 9” baking dish. Sprinkle with butterscotch chips. Bake at 325° for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool on wire rack.
