Butterscotch Apple Cake

Ingredients:

3 eggs
1 1/4 c. vegetable oil
1 tsp. vanilla
2 1/2 c. flour
2 c. sugar
2 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
4 med. tart apples peeled and chopped (4 cups)
1 pkg. (11 oz.) butterscotch baking chips
1 c. chopped pecans

Preparation Instructions:

Beat oil, eggs and vanilla in small bowl. Combine dry ingredients in larger bowl, then add liquids. Mix well. Stir in apples and nuts. Pour into ungreased 9"x13" pan. Sprinkle with butterscotch chips. Bake at 325 degrees for 40-45 minutes until toothpick comes out clean.
