Easy Garden Vegetable Pie

Ingredients:
2 cups fresh vegetables (broccoli, cauliflower, corn, green beans, or any you choose)
1/2 cup chopped onion
1/2 cup chopped green pepper
1 cup shredded cheddar cheese
1 tsp. salt
1 1/2 cups milk
3 eggs
3/4 cup Bisquick
1 fresh tomato (or more if needed) for top
Preparation Intructions:
Heat oven to 400 degrees. Cook desired vegetables in 1 inch of salted water (or steam) for about 5 minutes. Drain. Place vegetables with onion and green pepper and half of the cheese in a greased 10 inch pie plate. Beat eggs, milk, Bisquick and seasoning and pour mixture over vegetables in pie plate. Top with remaining cheese and fresh tomato slices. Bake until golden brown and a knife comes out clean when inserted, about 35-40 minutes.

Serving Suggestions:

Let stand 5 minutes before serving. Serve with a garden salad.
