Black Bean Lasagna

Ingredients:
2 -10 oz cans Ro-Tel diced tomatoes and chilies (drain one can)
1 - 6 oz can tomato paste
2 -15 oz cans black beans, drained
1 tsp. ground cumin
1 tsp. chili powder
6 to 9 lasagna noodles- cooked
1 - 8 oz. carton ricotta or cottage cheese
2 cups grated mozzarella cheese
Preparation Intructions:
Mix tomatoes and paste and set aside. Combine black beans, cumin and chili power - mash lightly and set aside. In a deep 9 inch square pan, layer 1/4 of sauce mixture, 3 noodles, 1/2 of ricotta cheese and half of the black bean mixture and 1/3 of the grated cheese. Bake in 375 degree oven for 30 to 40 minutes.
