Braham, Minn. - East Central Energy (ECE) published a cookbook to use good recipes to promote good works. The energy cooperative will donate proceeds from sales of "Watt's Cookin'" to support a co-op in Haiti that's building electric infrastructure to serve more than 30,000 people. To complete the rural electrification project, ECE partnered with other Minnesota co-ops, the National Rural Electric Cooperative Association International Foundation and the village of Pignon, Haiti.
In hopes that sales of the cookbook will generate $24,000 for the project, ECE published 2,000 copies. The title "Watt's Cookin'" comes from a regular feature in the co-op's member newsletter. The book features more than 500 recipes that cover everything from appetizers, soups and salads through main and side dishes to desserts, cookies and candies. Many recipes were contributed by ECE members, directors and employees, while others were selected from those published in the newsletter over the years.
"We included a recipe from Nehenie Ossius, a resident of Pignon, Haiti," reports Pat Moulton, executive assistant at ECE, who spearheads the cookbook project. "That recipe for rice and beans represents a typical meal in the village."
